1. Chicken Piccata with Zucchini Noodles
Ingredients:
- 4 boneless, skinless chicken breasts (approx. 600 g)
- Salt and black pepper, to taste
- 60 g almond flour
- 2 tbsp olive oil
- 60 g unsalted butter
- 120 ml white wine
- 60 ml fresh lemon juice
- 60 ml capers, drained
- 4 medium zucchini, spiralized
- 4 tbsp chopped fresh parsley
Instructions:
- Season chicken breasts with salt and black pepper.
- Place almond flour on a plate and coat chicken breasts evenly.
- Heat olive oil in a large skillet over medium heat. Cook chicken breasts for about 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
